Creamy Chard & Parmesan Dip

Creamy Chard & Parmesan Dip with Dosa Chips

Not only is this dip good. It’s very good. And a great way to get fresh veggies down your bairns’ wee gullets.

Here’s how to make it.

Assemble the following ingredients:

1 large bunch Swiss chard (any color).

2 cloves garlic (or to taste)

½ C whole milk cottage cheese

¼ C Parmesan cheese, grated

½ tsp. sea salt

2 Tbs. olive oil

1 large tomato, quartered

½ onion, chopped

Directions

Pour oil into hot skillet. Quickly sauté the chopped onion and garlic. When the onion is slightly browned, add the quartered tomato. Turn tomato until seared on all sides.

Toss the skillet contents into food processor. Add salt.

Wash Swiss chard thoroughly and devein, tearing into smaller pieces. Drain in colander and add to food processor.

Spoon cottage cheese and grated parmesan into food processor.

Puree until smooth.  Pour into small bowl. Serve with pita chips, veggies, rice crackers, etc.

I already had dosa batter in the fridge  https://familyfieldguide.com/hungry-mom-kitchen/indian-dosas-fun-to-make-a-treat-to-eat-2/so I made up four of five and baked in a 350° F oven until crisp. Those were our chips.
